"It’s pine trees and palmettos. It’s a Bar-B-Que sandwich and sweet tea. It’s cooking. It’s Carolina. It’s Cooking Carolina".
John Wade, The Pitmaster
Like the food he cooks, John is a Carolina classic. Attended school in Pinehurst & Southern PInes, N.C., he attended East Carolina University, and it was during his time as Pirate undergrad that he developed a true appreciation for fine Bar-B-Que at institutions such as Parkers, Respess Brothers and the numerous other Bar-B-Que spots in Eastern Carolina.
Vinegar-based, pit-cooked, Eastern North Carolina-style Bar-B-Que, "The Original Colonial-Style" our ancestors served when they settled the coastal regions of Virginia through Georgia. In other words, simply and the best. Since then, he’s served up pork to politicians, celebrities, plain folks and founded the 47th Annual Pig Roast at Beech Mountain a pig roasting celebration that attracts thousands each 4th of July in the High Country of North Carolina. Now he’s putting his know-how to use as the Cooking Carolina pitmaster. Hope y'all are hungry.
